2 1/2 cups wheat-free oats
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon sea salt
3 ripe bananas
1/2 cup coconut sugar
2 tablespoons coconut oil
2 teaspoons vanilla
1 cup sliced strawberries (I used frozen, but fresh would also work)
1/2 cup gluten-free and vegan chocolate chips
Place the oats in a food processor or blender and process into a flour. Pour flour into a large bowl and whisk in the baking powder, baking soda and sea salt.
Process the bananas, coconut sugar, coconut oil and vanilla until smooth. Pour into the dry ingredients and stir to combine. Fold in the strawberries and chocolate chips.
Pour into a parchment-lined loaf pan and bake at 375F for 35-40 minutes or until golden and a toothpick inserted into the middle comes out clean. Let cool for about 10 minutes before removing from the pan and placing on a cooling rack. Cool completely before slicing.
