Gluten Free Fish Tacos

These tasty tacos can be prepared using any kind of whitefish: cod, haddock, halibut or whatever happens to be your favourite.

One delicious secret to this dish is the flavourful spice rub. The other is the Lime Mayo, which also serves as an excellent mayonnaise substitute in any number of other dishes, including tuna salad and potato salad. Mix up a double batch of Lime Mayo and use your imagination in the days after you enjoy this dish.

Fish Rub
3 tsp chilli powder
1 tsp ground cumin
½ tsp minced garlic
½ tsp kosher salt
¼ tsp ground black pepper
3 tbsp olive oil

Lime Mayo

¼ cup mayonnaise
½ cup sour cream
3 tsp fresh lime juice
Zest of 1 lime (grated)
1 tbsp chopped fresh cilantro
(or ½ tsp dried cilantro)

1 tbsp butter
1 tbsp olive oil
2 large haddock fillets, about 400 g total (or substitute another whitefish)
6 corn tortillas (I prefer the hard shells for this dish)
1 cup fresh salsa
2 cups shredded green cabbage
1 avocado, sliced
6 lime wedges

In a small bowl, place the dry ingredients for the Fish Rub and stir to combine. Add the oil and stir to make a paste. Rinse the fish and pat dry. Rub the paste all over both sides of the fish fillets. Cover and marinate in the refrigerator for at least 30 minutes (or for up to 3 hours).

Prepare the Lime Mayo by combining all ingredients in a small bowl. Cover and refrigerate until ready to use.

To prepare the fish, place the olive oil and butter in a large skillet. Heat to medium-high and lay the fish into the pan. Cook over medium high heat for about 3-4 minutes (you want the fish to brown a bit, but be careful not to let it burn). Flip and cook for another 3-4 minutes, or until fish is cooked through. Break the fillets up into bite-sized chunks in the frying pan using your spatula. Remove from heat.

To assemble each taco, place several chunks of fish at the bottom of each taco shell; spoon some of the Lime Mayo over the fish, then some fresh salsa. Place some shredded cabbage and a few slices of avocado on top. Squeeze the juice from one lime wedge on top.
