Gluten Free No-Bread Tuna Salad “Sandwich”

This tasty tuna salad makes excellent use of the Lime Mayo featured in our Gluten Free Fish Tacos recipe. Instead of bread, we use a lovely cradle of crunchy endive to gently hold the fillings.

Lime Mayo

2 tbsp mayonnaise
¼ cup sour cream
1 tsp fresh lime juice
Zest of ½ lime, grated
2 tsp chopped fresh cilantro
(or ¼ tsp dried cilantro)

Tuna Salad

2 170-g tins of white tuna, packed in water
2 tbsp chopped fresh chives

6 endive leaves


In a small bowl, prepare the Lime Mayo by whisking all the ingredients together. Drain the tuna and add to the mayo mixture. Stir in chives.

Wash and dry the endive leaves. Divide the tuna evenly among the endive “cups.” Enjoy!

Makes 6 servings.
