3 cups wheat-free oats
1/3 cup chopped peanuts
1/3 cup gluten-free and vegan chocolate chips
2 tablespoons ground flax seed
1/2 teaspoon sea salt
3/4 cup natural peanut butter
1/3 cup + 2 tablespoons agave or honey
1 teaspoon vanilla
In a large bowl, combine oats, peanuts, chocolate chips, flax seed and sea salt. In a small pot, combine peanut butter and agave, and heat over low heat until the mixture is smooth and slightly runny. Stir in vanilla. Add peanut butter mixture to oats, stir well and spread the mixture into a parchment-lined square baking pan. Press down well. Bake at 325F for about 18 minutes, or until golden around the edges. Allow to cool for 5 minutes, remove from the pan and cool completely before slicing into 12 bars.
